A key to delightful dining is to set aside at least an hour, once a week, to truly sit down and enjoy a meal.Set the atmosphere for relaxation with wine, beautiful music and soft lighting or make reservations for your favourite restaurant.Saver a good bottle of wine. Allow the aroma to take you away to a vineyard in Italy or a wine cellar in France. Drink it slowly and enjoy each smooth refreshing sip. Cap off your night with the most decadent dessert you can think of. Allow the chocolate or a creamy cr�me brulee to melt deliciously on your tongue. Linger over it and make it last. Then wash it down with the best coffee or espresso you can find.

Prosciutto. Not just another ham. The word comes from the Italian "prosciugare" meaning 'to dry out' and 'drying out' is essentially how Prosciutto is made. There are two towns in Italy world-famous for their air-cured hams. The most well known is Parma, but anyone who takes their pink meats seriously also knows about San Daniele. Prosciutto di Parma and Prosciutto di San Daniele both gain their extraordinary flavour through the painstaking love and care by the artisans that make it, and from the mountain and sea air that are allowed to caress it during its 400 day curing process. This extended air-drying process allows a large percentage of the water in the ham to be leeched out by curing salt and evaporate into the air. The resulting ham is extremely dense in texture, intensely flavourful, and has a vivid dark pink colour.

Prosciutto is always eaten in very thin slices because it packs such a punch. Two of the most traditional ways to eat Prosciutto are on a chunk of crusty, freshly baked bread, or wrapped around a slice of ripe melon.

Strawberry picking is great in the summer with the family. If you do manage to get your strawberries home without eating them all, make room for them in the refrigerator. If they did not come in a ventilated container with a plastic lid, place them in a bowl, cover with plastic wrap, and poke several holes in the plastic. This storage method is intended to allow the berries to breathe, but also prevent them from losing too much moisture. Strawberries will decay much more quickly after they've been washed, so hold off until you are ready to use them

Make sure that all the ingredients are at the temperature; they should be kept cool at around 18� C. Prepare a basic yeast dough mixture as follows: pour a mound of flour onto the work surface and make a well in the centre; dissolve the yeast in some tepid water and pour into the well. Work the liquid into the flour and knead until you obtain a soft, elastic dough; leave aside.Cover with a cloth and put in a dry, draught-free place to rice.The dough has risen completely when it has doubled in bulk. If adding spices or herbs, these should be finely chopped or powdered. It is a good idea to put a shallow bowl of water beneath the bread while it is baking. This produces steam which not only helps the bread to rise but also prevents a hard crust forming immediately and perhaps even burning.Bread should be eaten when it has cooled completely.The bigger the loaf of bread, the better and longer it will keep. Preparation time: 30 minutes. Raising time for the dough: 2 hours. Baking time: about 30 minutes.

An entire meal can be based around one particularly rare or special wine which will really impress your guests.
